It goes great with kebabs or even stews, as the pomegranate gives it a very nice tart flavor. Weight Watchers Pita and Pomegranate Salad recipeMakes 3 servings Ingredients3 medium tomatoes, chopped2 small cucumbers, chopped3 green onions, sliced1-2 hot peppers, sliced1/2 cup chopped mint leaves1/3 cup olive oil1 lemon, juice and finely chopped peel of2 pita breads, toasted1 clove garlic, split1 pomegranatesalt (to taste) Preparation1. Mix together the tomatoes, cucumbers, green onions, peppers, and mint together in a salad bowl.2. Add the lemon peel and lemon juice and toss well; add the oil and season with salt and pepper.3. Split the toasted pitas, and rub the rough sides with the garlic; tear the pita into small pieces and add to the salad.4. Remove the seeds from the pomegranate (be careful not to stain your clothing with the juice!) and add to the salad and discard the peel and the pith.5. Toss the salad well, and serve immediately.
