Guest guest Posted November 12, 2001 Report Share Posted November 12, 2001 Best EVER! Ethel's Sugar cookies 3/4 cup GFCF margarine 1 cup granulated sugar 2 eggs 1/2 tsp. GF almond extract or 1 tsp GF vanilla (I use vanilla) 2 1/2 cups GFCF flour blend ( 2 cups rice flour 2/3 cups potato starch, 1/3 cup tapioca starch) 1 1/2 tsp xanthan gum 1 tsp baking powder 1 tsp salt Mix margarine, sugar eggs, and flavoring thoroughly. Combine flour, baking powder, salt and xanthan gum together, blend in. Chill at least 1 hour. Heat oven to 375 degrees. Roll dough 1/8 in thick on lightly gfcf floured surface. ( I like tapioca flour for that) Place on ungreased cookie sheet. Bake for 6-8 minutes. Makes about 4 dozen. Enjoy! Juli sugar cookie recipe Does anyone know of a gfcf sugar cookie recipe that somewhat resembles the shape it is supposed to after cutting with cookies cutters and baking??..I have the one in Bette Hagman's book the Gluten-Free Gourmet, but the cookies seem to rise too much and are not recognizable as the shape we want them to be.
