I think it's for dripping your yogurt, which you don't have to do if you don't want to. I've read here on the fourms that some people tolerate the yogurt better when the galactose is removed (which is what happens when you drip it). Basically you just put the yogurt in your cloth bag and hang it from somewhere, make sure to put a bowl or something underneath it to catch the drippings. I hang mine for about a quarter of a day outside the fridge (more liquid drips off that way). On page 158 in Breaking the Vicious Cycle, Elaine talks about how to make cream cheese out of your yogurt by dripping it, check it out. ~ CD, SCD 02/21/2010 I bought the yogurmet yoghurt maker from lucys kitchen shop and inside is a cloth type bag i believe is for making dry curd cheese. Can anybody who has this yoghurt maker tell me how you actually go about making this cheese? I have an idea but tried it the other night and it didnt work.
