I haven’t done any research on onion specifically, though, but it makes sense that the chemicals are retained even when the fiber in onion is softened during cooking. Since my immune system still reacts strongly to all antifungals, and cooked onions triggers the same symptoms, then my guess is that they are still effective, whenever and however you eat them. Onions are still fibrous, however, so if your digestion isn’t working too well, then you might not want to eat too much cooked onion! Kim M.
