To my rescue again....LOL

The thumbprint cookies are the ones you can buy in the bakery that have a bit

of frosting in the middle of the cookie and sprinkles around the edges. Some

people put a hershey kiss in the middle.

The flour is the only thing I need help with. The rice flour just didn't

taste quite right. So I wondered if there is another GF flour that is better

for cookie baking.

Here's the recipe before GFCF conversions. Hope you like it.

Thumbprint Cookies

1/4 c packed brown sugar

1/4 c shortening

1/4c margarine, softened

1 egg, separated

1/2 tsp. vanilla

1 c flour

1/4 tsp salt

3/4 c finely chopped nuts.

Jelly for the centers, or I use frosting or Hershey's kiss

Heat oven to 350 degrees. Mix brown sugar, shortening, margarine, egg yolk

and vanilla. Mix in flour and salt until dough holds together. Shape dough

into 1 inch balls. Beat egg white slightly. Dip each ball into egg white;

roll in nuts. Place about 1 inch apart on ungreased cookie sheet. Press thumb

deeply into center of each. Bake until light brown, 8 to 9 minutes.

Imediately remove from cookie sheet and cool. Fill thumbprint with jelly,

frosting or Hershey Kiss

-Rhonda-did you use sweet rice flour or just plain rice flour? I

don't like any cookies without sw rice flour. My daughter loves

those cookies too with pepermint frosting in the middle-I already

bought the candycanes to crush :)
