Depends on what you want to use it for. I would think that is the main reason to do it. It does also take away some of the tartness. And some people also find dripped yogurt a bit easier on the tummy. Patti Dripping yogurt Can someone explain why one would drip yogurt? Galactose will adhere to the casein of the dripped but I have no idea how much so I think 2 cups of undripped per day for children is enough. Even for adults, one should not top, at the very most 2-3 cups. With proper digestion and absorption (which we all aim for) we are feeding OUR CELLS the properly broken down lactose (glucose and galactose). Carol F. It gets rid of the galactose sugars which are a by product of the yogurt process. Some people find that they do better with yogurt that has been dripped and prefer the taste that way, others are fine without. Like everything else, it's a matter of how you react personally and your personal tastes. You should try it to see if there is a better reaction to it that way or if you like it better. Dripping the yogurt primarily makes it thicker and less tart. <g> But half and half is generally pretty thick all on its own. It doesn't hurt not to drip it if you're doing well with this yogurt.
