That's typically when they can't stand meats & gravitate toward GFCF pastas, which I won't be able to use anymore. So just gathering ideas for " in case " at some point. Zucchini " noodles " , cashew butter muffins (very " bread-like " ), baked apple w/ honey and cinnamon, squash fries, sliced mushrooms sauteed in butter, cheese " crackers " . The " Quick Granola Cookies " from Lucy's cookbook (not for beginners). Pureed/whipped cauliflower... seasoned with salt and pepper, butter, some roasted garlic, etc.... looks just like mashed potatoes and tastes *almost* as good. Top with grated cheese for those who can use dairy.
