Tested okay on almonds (supposedly related to peaches), so that's the only kind I can use, except maybe coconut flour. That's why I asked which would be better. But I can't use pecan anything. Guest guest Posted October 4, 2006 Report Share Posted October 4, 2006 hi michelle, i tried experimenting with coconut flour and its tricky to just substitute... in fact its almost impossible as coconut flour absorbs alot of the liquid. it is recommended that you substitute no more 75% if your using a recipe that is for another type of flour so you could do upto 75% of coconut and then a nut that is tolerated... otherwise get your hands on the cooking with coconut cookbook which uses only coconut flour for everything from bread, pancakes, schnitzel etc! i dont have the cookbook but saw a friends copy and it looked great. have cooked a couple of the recipes and they turned out fantastic! i will post a link soon (just have to find it!). roweena x mumma to audrey 3yrs food intolerance (leaky gut) and behaviour issues Re: Coconut vs. Almond Posted by: " dena berko " denaberko@... denaberko Wed Oct 4, 2006 12:04 pm (PST) Coconut flour doesn't hold together well. It works well in baked goods only when combined w/ another flour - like almond flour.
