apples, honey & coconut milk yogurt

I do believe that some people avoid honey and apples due to phenol content. This

is a personal decision that really depends on the individual. SCD includes both

of those foods... but no one has to eat any food that causes uncomfortable

symptoms. You might consider the No-Fenol enzymes if these foods are causing a

problem.

The question of coconut milk being used as a medium for yogurt has come up

several times recently. I am really not sure it will work.... due to the

natural anti-fungal/anti-bacterial qualities of the oils in coconut milk.... but

I honestly do not know. I posted this same response before, hoping that someone

else who has had success making SCD yogurt with coconut milk would chime in...

but, I have not seen a response.

If you try coconut yogurt, you would need to make the coconut milk yourself,

from dried, unsweetened coconut. Like I said, though, I have no idea whether the

probiotics would survive and ferment properly in coconut milk. I just have a

feeling that it would impair their growth.... but I certainly could be wrong and

will stand corrected if someone is having success with it.

Please note: " Young coconut kefir " or " green coconut kefir " as outlined on the

Body Ecology Diet is NOT legal for SCD.

Apples are high in sucrose that can be difficult to digest for some.

Oral allergies can also create difficulties. However, cooking the

item often breaks down the molecule that 'feeds' an oral allergy. For

example: I can eat cooked bananas quite easily but not raw.

Honey can be reactive for some people for many, many reasons. So if

it seems a person is reacting to it, then they probably are.

Thankfully we are okay with honey in our house but we still limit it

to once a day and try to have a few days with no honey, every week.

I'd like to hear too if someone has had success making coconut milk

yogurt.
