Guest guest Posted August 30, 2002 Report Share Posted August 30, 2002 Dear Heidi, This is the BEST pie in the world. Try it, you'll love it!!!LOL PEANUT BUTTER Pie 3/4 c. Confectioners sugar-I use a little more of this. 3/4 c. granulated sugar 1 Tablespoon flour 3 large eggs 2 teaspoons butter 1/4 teaspoon cream of tartar 1/2 c. creamy PEANUT BUTTER 3 tablespoons cornstarch 1/8 teaspoon salt 3 cups of milk 1 teaspoon vanilla In small bowl, with fingers or fork, combine confectioners sugar and peanut butter to make coarse crumbs. Set aside. In 2 quart saucepan, stir together 1/2 c. granulated sugar, cornstarch, flour, and salt. Separate eggs, placing whites in medium size bowl, and set aside to warm to room temperature. Add yolks to sugar mixture in saucepan along with milk. With wire whisk, stir until very well combined. Over medium heat, stirring constantly, heat milk mixture to boiling. Cook, stirring 2 minutes longer. Remove pudding from heat, stir in butter and vanilla. Heat oven to 375 degrees. Sprinkle a third of the peanut butter mixture over bottom of pie shell, spoon half of pudding over crumbs. Sprinkle with another third of crumbs and top with remaining pudding. Add cream of tartar to egg whites in bowl. With electric mixer at high speed, beat whites until soft peaks form. Gradually sprinkle remaining 1/4 cup granulated sugar over whites, beating until meringue forms stiff peaks when beater is lifted. Spread meringue over pudding in pie shell, being sure to touch edge of shell to seal. Sprinkle remaining 1/3 of peanut butter crumbs around top edge of pie to make a border. Has cho pudding (scratch) with a strucel (sp?) layer, dry roasted nuts, and whipped cream. I will be sure to make it for Heidi at the Or-e-gen reunion!
