Can you use saccharine? Charlene DD has bad systemic yeast. This cake must not have any honey, or fruit or dairy. I also need frosting. Any ideas??? There is a recipe for cashew butter banana muffins on pecan bread which are wonderful that may work. Also, I made some cinnamon raisin bread yesterday in small loaves that you may could use. I am not sure of how much you would need total but I can give you ratios: 2 tbsp nut butter-I used pecan- to 1 egg I am guessing you would need 2 cups of nut butter, so that would mean 10 eggs approx I added cinnamon, raisins and crushed pecans I did not use any honey and I liked how it turned out. It is not very sweet, though. You could probably add some reduced grape juice, to concentrate flavor and thicken it to a syrup. For frosting, a good base is to take the Spectrum Shortening and whip it in the food processor. Instead of honey you could try some fruit juice boiled down to syrup. This would resemble honey-I have never tried that, so I am not sure what would happen . You might also try adding some fruit puree. Again never tried it. But I may try it for my son's birthday. Try zucchini muffin batter in a cake pan and dissolve saccharin in a little hot water before adding. For icing, add saccharin to dripped yogurt and perhaps top with unsweetened coconut. Basically muffins can be made with nut flour, eggs, grated zucchini drained and moisture squeezed out, baking soda, vanilla, cinnamon. Try 1/3 of a recipe first to see how it tastes. It was kinda a last minute invite so I don't have a lot of time to experiement. Can't do dccc. Can't do fruit juice. Any other ideas for frosting? DD is used to things that don't taste very sweet at this point. I just mostly want it to look like a cake so she won't feel left out. She isn't a big fan of nut butters though. I think it is the texture more than the flavor. She does love butter, that is the only dairy we allow at this point. Thank you!
