For the red ones, which are the same lentil, only hulled, I had to go to a fancy foods store (Fresh Market or Whole Foods). HEAVENS! You've been SCD less than a year -- don't give up! I didn't tolerate white beans early on (this was before " stages " had been invented), but six months later, I was fine with them -- probably around a year. I can't say how long it took me to tolerate lentils because it never occurred to me to try the darn things until after Hurricane Katrina! That was just about the time I hit Year Four. No problems! In fact, lentils have snuck into all sorts of things in last 18 months because they're so easy to fix and my husband, who hates beans, likes lentils! (Go figure!) But I make " red beans " ( " red lentils " ) and sausage. I'm planning on shrimp creole, and using lentils in lieu of rice to serve it on. I use lentils in chili. I've even done a mock potato salad with them. My husband was muttering that the next thing he knew I'd be trying to make pancakes with them, and I pointed out that I'd already done tortillas with white beans, so, why not?
