As I was really looking over the intro diet (we didn't do it) I am realizing that we should have now. So, we are going back to square 1. So, how on earth can I bake things, like the cheesecake, without EGGS? My son is VERY allergic to egg whites (23 on IgE test), so we can't use them. I have used flaxseeds, but can't continue to use them as he is somewhat allergic, plus no seeds for 3 months, right??? This diet is so hard.I think I am going to snap!!!!! All I ever do is sit in the kitchen trying to cook for him, PLUS I have a demanding 1 yr old too (also with special allergies, and hypoglycemic - tried her on the diet and she had her first seizure! Combo with moving to higher altitude. Nightmare). And, I don't think he will eat the intro diet either. SOOOOO picky, and mostly eats the Applegate Farms hotdogs and deli meats (all illegal I guess). He did test pretty allergic to cow's milk for IgE (2.64) and had bad milk allergies (vomiting) from birth, but tested fine on IgG for any of the dairy, yogurts, cow's milk, etc. I am scared to do the yogurt b/c of the cow's milk allergy..any advice here? Is the yogurt something completely different from the cow's milk after it is fermented???? Please any advice would be great!!!!! Anne Re: 2 wks on diet with HUGE, GOOD changes! It's only for two days. If it's still just completely impossible for some reason, you *can* ease into SCD.... and then go back and do intro a little later, when he's more used to the foods. There is a section in the Food Preparation section on doing the Intro Diet for kids with autism.... with some suggested variations for kid menus. I'm sure there are some ideas there that will help. If your child can't have eggs, you won't be using the cheesecake that's allowed on intro anyway. Most kids here start SCD dairy free.... and then if they do dairy at all, they do SCD GOAT MILK yogurt.... and go on from there. Flax seed is illegal .... period..... on SCD. There are a number of egg and dairy free recipes on the website also.... in the " Recipes " section. There are also a couple of recipes there for legal egg replacers you can try. You'll also see a link called " Overcoming Difficulties " , which has a subsection on " Picky Eaters " . Please read through those completely. You are not alone in having a picky eater.... that is very common around here. Luckily, most kids expand their food selection (believe it or not!) as time passes on SCD. When he had his IGG test they gave us a personalized booklet with all of the foods he couldn't have and all of the foods he could have. They said he can have Duck eggs. They taste the same but I guess the proteins are different. I find mine at New Seasons health food stores or the local farmers markets. He doesn't react to them at all. We are 5 months into SCD, with no eggs, having trouble with nuts, and were without the dairy for awhile. My best suggestion for egg, which unfortunately won't work in cheese cake but will work in both baked goods and chicken pancakes, is avacado. it is really great, and good for us as well. When I bake, which is not often because my daughter cannot do very many nuts, I use avacado and acorn squash.. makes amazing muffins, cupcakes and cookies. good luckk and I hope this helps. By the way, no set amounts of avacado.. I just kind of wing it. Depends on what you mean by cow milk allergy - which part of the cow milk you are allergic to and do you mean a sensitivity or a true (anaphylactic) allergy. Some people you the word sensitivity interchangeably with allergy. For example: some who are lactose intolerant would call it an allergy. The casein in cow's milk changes from a three dimensional shape to a two dimensional shape. The change in shape makes it much easier to digest and some people who were unable to tolerate milk can tolerate the 24 hour yogurt. Also, goat's milk has smaller milk protein than cow's milk - which are easier to digest. Fermenting goat's milk to 24 hour SCD goat yogurt will also change the shape of the casein molecules from 3-D to 2-D. This is why we often suggest goat yogurt as a good leaping point for those interested in adding some dairy back into their diet.
