I made your nuggets and thinks they are fantastic! I was also

able to make them with leg meat and with regular (uncooked) mayo and

not worry since it gets cooked when you bake them.

Listmates are often looking for crunch early in the diet and this fits

the bill--something that can be eaten soon after the intro and has

crunch!

Hi guys,

I tried making the cooked mayo today and something went horribly

WRONG :-(

Can I ask how to make it step by step? I don't really know what I did

wrong but it wouldn't thicken up no matter how long I blended it. I

thought (or hoped) if I put it in the fridge that maybe it would

thicken but when I just checked on it, it looks like melted butter. I

don't know what happened but I really want to try this nugget recipe

because my daughter isn't eating much right now.

Thanks for any help - i'd like to try to make another batch

(correctly this time) tomorrow.

Yes, these chicken nuggets are a jewel. They really do look like the real

thing. I like 's suggestion of not worrying about making cooked mayo

because the nuggets are in the oven for 35 minutes anyway. I made the regular

mayo from pecan bread, and had no problems. Here's what I did. I cracked the

egg into my little food processer. Added all of the other ingredients to the

food processer except the saflower oil. Put the lid on, and whizzed it up for a

few seconds just to combine everything. Then, I started adding the saflower oil

a tablespoon at a time, whizzing for a few seconds between each addition. When

I got the entire cup of oil finally added in, I whizzed for a little

longer...maybe 20 seconds or so. That's it. It turned out fine. Give it

another try. It was my first attempt at homemade mayo, but I had read several

posts about the trick being to add the oil to the mixture very, very slowly.

Hi le,

I know that this message is old, but I finally got around to making these

chicken nuggets. And, they are great!!

Super easy to make, and my son loves them. They pack well in a lunch bag for

school.
