Black-bean and corn tortilla pie 1 can (16 oz) black beans, rinsed and drained 1 can (15 oz) whole kernel corn, drained 1/2 cup chopped fresh cilantro leaves (I used dried - 1 tsp) 4 (10 " ) low-fat flour tortillas 1 jar (11 oz.) chunky salsa 2 cups (8 oz) shredded cheese (Monterey Jack, cheddar or a Mexican mix) fat free sour cream (optional) 1. Heat oven to 450 degrees. Coat a baking pan with cooking spray. In medium bowl, combine beans, corn and cilantro. 2. Place 1 tortilla in pan. Spread 1/3 of salsa over tortilla. Top with 1/3 of bean/corn mixture and 1/3 of cheese. Layer 2 more times, finishing with last tortilla. (I left off the top tortilla to save on fat and carbs). 3. Bake in oven about 15 minutes, or until cheese melts and filling is hot. Serve with sour cream, if desired. Serves 4 regular people (about 8 MGB servings)! NUTRITION: 481 calories, 31 g. protein, 12 g fat, 64 g carb, 591 mg calcium, 8 g fiber (so cut that in half and you have a great meal!!!) This recipe is from Parents Magazine, September, 2000.
