I think some use pear or applesauce as an egg substitute... some use a gelatin and water mixture. I was going to look more in depth but my browser is acting up. Pancakes were my daughter's favorite food. I follow the recipes with egg substitute ( legal of course) and they just won't fry up. they turn into mush. good luck.. let me know what you find! Rather than a pancake, has anyone tried using an egg substitute, but frying as a crepe? A crepe doesn't require flipping, which is what I'm told has been the problem with non egg pancakes. She hasn't tried it herself, but Gail thought that this could be a workable solution.
