Christa,

Leeners has some good recipes and good equipment -- this is where I got my

stovetop smoker for making wonderfulsmoked brisket and ribs! This is also

where I buy the collagen casings for making my own hot dogs and sausage.

This recipe would make a legal DCCC so long as you do not add the cream at

the end as suggested. You would need to use SCD yogurt for moistening the

curds, as suggested in BTVC.

There are many recipes floating around the web for making a so-called

cottage cheese by simply adding lemon juice or vinegar to the milk / cream

to make curds. This method is NOT legal because there has been no ezymatic

action to get rid of the yogurt, as in the Leeners recipe.
