I have the Millenium edition and the recipe is Herb's Bean Pancakes on page 100. Salt is " to taste " in the recipe. I used 1/4 t. My changes are to use 2 eggs instead of 1 to keep them from falling apart. Then I thinned the batter a lot because I had crackers in mind (but the pancakes are yummy; the onion gives them a flavor like a potato pancake, different texture, though.) I thinned the batter with the liquid from sauerkraut. But the recipe says to use yogurt. I think water or the liquid from cooking veggies would be good, too. The sauerkraut liquid made them a bit salty, but my son says they are just fine. I used a lot of oil on my griddle.Even though it's " non-stick " I often have sticking problems. I made the pancakes small. I think next time I'll make them really small, maybe Ritz-cracker size. Then I cooked them on both sides and put them in the dehydrator. I had no idea what temp to use: I started at 145 for about 3 hours and then dropped it to 95 before going to bed.
