What can I do with the leftover nut bits in the cheesecloth afterwards? I sometimes add more water and do a second straining. The second one leaves you with a thinner milk but is still good. Whether you do a second straining or not the residual nut bits should be thrown out. Elaine wrote that since you remove all the good stuff (it's in the nut milk) you have almost pure cellulose (in the nut bits) which will be concentrated and can feed the harmful gut bugs.
