The ingredients are: > Pasteurized part skim milk, culture, enzymes & salt. Is it legal? Is it a hard cheese (like Brick or Monterey Jack) or is it a dry curd cheese (like regular cottage cheese without all the moisture)? Guest guest
We went to a local health food store to search for the dccc yesterday. I didn't go in, but my husband asked if they carried dccc. The man said that they used to, but it didn't sell very well. He said they do have curds. I'm wondering if this is the same thing. My husband said that the package said that it had enzymes in it, too. I'm wondering if this is dccc. Since I've never seen it before, I just don't know what I'm looking for. Maybe some brands that are sold in the US would be helpful, too. Guest guest
I found the Friendship Farmers Cheese at Central Market, which was sort of white and " squishy " . They also have something else called swedish farmers cheese which did not resemble the friendship kind, it was more hard/solid like cheddar. > I surprisingly found farmer's cheese @ my local grocery store. > Its " billie's farmer chees " by Shullsburg. Guest guest
Thanks to all who answered my question (and all my other ones ). The cheese I bought was the wrong kind. I've given up on finding it and am going to use dripped yogurt. .. > I surprisingly found farmer's cheese @ my local grocery store. > Its " billie's farmer chees " by Shullsburg. Guest guest
Meleah, I have been able to find Friendship Dairy Farmer Cheese (UPC Code 071481011601) at both Whole Foods and a similar market called Fresh Market. The Fresh Market people are very friendly, and have ordered it by the case for me. It freezes really well, so I buy a whole case, toss it in the freezer, and have it available as needed. Fresh Market orders several times a week so I can call on Monday, and then go pick up the order on Saturday. DCCC can also be ordered from http://www.westbycreamery.com/index2.html The price of the cheese isn't bad at all. The price of the next day shipping and the cooler to put it in kicks the price per pound up significantly. I've heard, though, that you can ship the cooler back to them for re-use. -- Marilyn (New Orleans, Louisiana, USA) Undiagnosed IBS 25 Years, SCD Five Years Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund
Guest guest
Thanks. We were in Dallas, and there was a Whole Foods and a Fresh Market there. There's also a Central Market which I know that someone found it at. What a bummer. I had a cooler with me and everything. I could've brought home a boat load. Oh well. We have a local health food store in Charlotte that i just found out about. It's about 45 minutes away, but it's apparently the size of a regular major grocery store. I'll call to see if they carry it. How long would it stay good in the refrigorator? Can it be frozen, and would this affect its use when thawed? Guest guest
Duh. Disregard the freezing question. I don't know where my brain was when I asked that one. I would check the expiration date on it when you buy it and see how long it's supposed to stay good. I can't tell you how long it WILL last in the refrigerator because to be honest, things made with it rarely last more than three days around here. Well, except for when I made several lasagnas and froze them. Then it lasted longer! Of course, if you can't find DCCC, you can always use well-dripped yogurt cheese. I'm grateful for having found it because it's one less thing I have to actually make. -- Marilyn (New Orleans, Louisiana, USA) Undiagnosed IBS 25 Years, SCD Five Years Darn Good SCD Cook No Human Children Shadow & Sunny Longhair Dachshund
