It is very costly and you can make your own soaking a vanilla bean in Vodka for a couple of months but I don't bother with that. One cheesecake recipe takes two whole teaspoons of vanilla. Carol F. It was $10 for a small bottle, and it wasn't even organic. I haven't seen any maple extract that is legal, but I have a legal almond extract that is McCormick. Sorry. I know I misspelled that. You can use the vanilla, no problem. The maple is not legal, though. I don't know if you'll find a legal maple flavoring, but you just have to read labels. Those extracts from McCormick with the alcohol base are okay to use... as long as there are no OTHER hidden illegals. Take along your magnifying glass and read, read, READ. Guest guest Posted September 17, 2006 Report Share Posted September 17, 2006 The prohibition against alcohol on gfcf was cleared up with better research, that said distilled alcohol, even if made from a gluten-containing grain, leaves gluten fragments behind so no gluten is in the alcohol unless added back in as malt flavoring, etc. We used alcohol-based extracts for years with no problem, and now on scd, have switched to sugar-free alcohol-based vanilla sold at Smart & Final under the Chef's Review label. (By the way, Smart & Final is also where I buy pure salt, Diamond Crystal Kosher salt in 3 lb boxes, but it is fluffy so use more in recipes.) But if you want to avoid alcohol in extracts, I think that Frontier uses a glycerin base in their alcohol-free extracts, and glycerin is okay on scd.
