I made my first batch of homemade yogurt. I new it would be tart but was surprised at just how tart it was. I like it but I know my kids are not going to. They wer never yogurt eaters to begin with except those kids yogurts which are just crap anyway. How do you flavor it and sweeten it with out putting in so much honey that's its runny? Can you add vanilla to the milk in the begining or does all the flavorings need to be added after the yogurt is finished? If I want to drip it do I have to have cheese cloth? If so where do you get that? Also my dd isn't much of a honey fan. We are currently using pure maple syrup for pancakes/waffles and need an alternative. I was thinking of maybe a strawberry syrup but I have no clue how to make that. Guest guest Posted August 30, 2006 Report Share Posted August 30, 2006 , You do wait until after the yogurt is all done, and chilled/set in the fridge, before adding flavorings and sweeteners. Dripping the yogurt will help a lot... it will be much less tart. You can use a standard tea towel... the thin muslin type... or you can buy a piece of regular thin muslin fabric at a fabric store (wash it before using, of course). Cheesecloth actually wouldn't work very well unless you use several layers of it... the openings between the fibers are too big. If you want to try cheesecloth, it's usually found wherever canning supplies are sold. Maple syrup is definitely illegal on SCD. Honey and saccharin are the two legal sweeteners. You may be able to buy pure saccharin at a pharmacy. I find that mashed ripe banana is a good mix with yogurt... really helps sweeten it. I don't have to add any honey for my daughter. Plain yogurt IS an aquired taste... especially if they are used to getting the regular sugar sweetened stuff. Over time, they will get more used to it. I don't know how sweet a syrup made from strawberries would be.... even if cooked down. It would add a lot of flavor and color, but maybe not enough sweetness. Guest guest Posted August 30, 2006 Report Share Posted August 30, 2006 My son would never eat any kind of yogurt by itself, but he likes it as an ingredient in fruit smoothies and in cold cream of tomato soup (in place of milk--sounds odd but he loves it).
