Donna, I couldn't help but comment on your mention of having problems digesting hard proteins.....I have the same problem, and I do know that they say the correct CP diet is to eat low protein, because we just can't digest it as well as we used to. This has even shown up in an obvious manner now that I'm diabetic. We've discovered that I don't even begin the digestive process of proteins until at least 3 hours after I eat, making it impossible to only dose my insulin one time before a meal as most people do. I have to dose at the start of the meal for the carbs and fats, then dose again in the third hour after a meal when my BG's start rising again as the protein starts to digest. So it just means more injections each day than one would expect. 30 grams of fat a day is what I still stick to. It used to be only about 20 until my pancreas burned out, then I went up to 30, mainly in an effort to assist with my weight gain. It took forever,( 1-1/2 years) but I finally have gotten up to 123. About those cheeseburgers.....I found a special brand of beef in the specialty counter at Publix that has only 4 grams of fat! I've bought that and made hamburgers out of it when the urge was just too overwhelming, cuz we all like to sit down to some cheeseburgers and fries (I oven bake Oreida's) sometimes. This beef hasn't given me any problems at all. It's expensive, but worth it for a treat once in a while. I've only found it at Publix, if you have one nearby you might try it out.
