Hmmmm...... I will admit that I have never used that brand, because it's not

available where I live.... but it DOES seem as if Elaine's last comments in

what you've posted here are saying that she had changed her mind and would

prefer we NOT use the Friendship Farmer's Cheese.

I will let Sheila or Mimi comment... but I do prefer to defer to Elaine's

judgement on most things, just knowing she was always trying to err on the safe

side.

O.K. We've been using Friendship Farmer's Cheese which is listed as

a resource in BTVC on pg. 187 (from Whole Foods)for about 4 months.

I just now read the ingredients which say skim milk, cream, salt -

totally my fault for not reading sooner. Now this freaked me out a

little because of the cream so I went online to research a little

and now I'm completely confused. HELP!

the farmers cheese and is looking into ordering me the hoop

Elaine also said she was concerned about 10% fat and this only has

2.5g total fat. I'd sure love to use it because it tastes much

better than the DCCC that I have access to...but I'll wait to hear

what you more experienced folk think. We're redoing the intro AGAIN

:( and we really want to get things right.

OK..... I see what you mean. She was really referring to the two other brands

that were 10%.

Well.... I was hoping Sheila, Mimi, Charlene or Carol could comment on this.

Hopefully, they will pop in today.

I guess it *seems* like it's probably still okay. It is confusing, though... I

wish I was more experienced with this brand. I only have access to one DCCC....

by Sunshine Dairy in the Portland, Oregon area... but I rarely buy it and don't

have any on hand at the moment.

Patti.

Friendship Farmer's cheese is legal if it is the stuff that looks crumbly. There

is another that looks like brick...that one is not allowed.

Charlene says it's fine... and I trust her judgement. I got confused by the

comment posts from Elaine.... because it seemed like she was suspicious, but I

think now that she was just referring to the other brands that have the 10%.

Hi Leah,

The Friendship farmer's cheese is SCD legal. Looks like cottage

cheese, but has O% carbs. The farmer's cheese that looks like Brick

or mozzarella cheese is not legal, it has more than 0% carbs (ie.

unfermented lactose).

Despite having cream listed as an ingredient if the carbs are listed

as " 0 " all the lactose in the skim milk and the cream has been

digested (okay for SCDers).

You have been using the correct cheese. :)

I was using 0.5 % and sometimes 10% DCCC and Jodi who co authored Grain-Free

Gourmet said she uses the lowest fat type of DCCC because it is high in protein.

I once asked Elaine if I could use the .05%. and 10% and she said " yes. "

There is a legal 3.8% by Western Creamery, (Now owned by Liberty Foods) in

Ontario

called " Baker's Cheese " but it is plain old DCCC too.

I found a totally low fat DCCC from Montreal called Mehadrin that tastes like

cream cheese

even though it is 0.1% butter fat. It is from Quebec but also sold in Ontario,

Canada and is

the best for cheesecake and lasagna too.

Sorry I know nothing about the U.S. brands.

O.K. Can anyone who has a container of the correct Friendship farmer's cheese

give me the coe off of it. Someone gave me a code a while back when I found out

that BJs carried it, but I don't think that mine looks like cottage cheese. It

looks more like a brick to me.

Confused about Farmer's Cheese

I am phoning Western Creamery (Liberty Foods) to be sure of what is in

10% DCCC. If skim milk is added after it's been made into cheese it

would not be legal as there would be lactose. The brand is listed as

legal in BTVC but I will double check about the 10%. I thought Elaine

said it was OK but I need to be sure.

Patti,

Friendship Dairy Farmer's Cheese which is crumbly is legal. The stuff that

looks like " regular " cheese, say, a cheddar, or something, is not.

I was finally able to find this at Fresh Market in Covington following

Katrina, and have been using it quite successfully.

My understanding of what Elaine was saying was that the hoop cheese was

better, but the farmer's cheese was legal. There was someone else who was

producing a farmer's cheese with more fat in it because they were using a

whole milk instead of skim milk the way Friendship does, and she was

concerned that the procedure might not be the same.

In addition, there is a rabbi in Israel, who translated BTVC into Hebrew,

who was producing kosher DCCC, which had a higher fat content than most

American DCCC, but she was not concerned about that, since she knew how

scrupulous the rabbi in question was.

Hi Patti

Three or four years ago Elaine and I discussed the Organic meadows

pressed cheese. I was unable to find any DCCC on my little island

but found the org. Meadows pressed cottage cheese. She said it had

far to many carbohydrates (8g of carbs/100g of pressed cotage cheese )

after the culture was added and wasn't legal. We figured they must

be adding milk products after the culture had done it's fermenting or

they weren't fermenting it long enough.

If the final carb content is still high after fermentation than you

shouldn't use it. The friendship farmer's cheese (resembles cottage

cheese) with 0 carbs (ie. no residual lactose) is SCD legal. The

skim milk and cream in the ingredient list must be added before

fermentation.

Hi Leah,

She was concerned about the amount of fat in some brands because it

indicated that milk products had been added after fermenting *in some

products*. You are right Pearl, if there are 0 carbs,0 sugars it

doesn't matter what the fat content is.
