My older daughter is not eating tomatoes yet, but I thought I would try canning. - Does anyone have a good recipe that makes use of the tomatoes I have (rather than adding tomato juice)? - Any advice for storing the tomato sauce in glass jars? Guest guest Posted September 7, 2006 Report Share Posted September 7, 2006 I don't know if this qualifies as a good tomato sauce recipe - but this is what I have been doing. I have a bunch of dried tomatoes - from the dehydrator - that some friends gave me from their garden. Left overs from last year. I have a great blender (Vita Mix). So, I put the dried tomatoes (I mean really crisply dried) into the blender and pulverize them until they are a powder. Mostly this is because they were not skinned or seeded before they were dried. Then, I put some distilled water on to boil - about 1 & 1/2-2 cups and add spoonfuls of tomato powder to the water. I add enough powder until it is a syrupy consistency and then let it simmer down until it is a great tomato paste. I'm going to the farmer's market this Saturday just to buy tomatoes (I'm an apartment dweller with no space for a garden) so I can drag out my dehydrator and stock up on tomato powder for the winter. Mama, I am giving you a website with all sorts of suggestions about using tomatoes. The recipes will have to be adapted for SCD. I appreciate your input! > The basic tomato sauce is just made by simmering a 48 oz. can of legal tomato juice and adding a bay leaf and seasonings of your choice. Let it cook on low to medium heat until it reaches the consistency you want. When it cools add a little honey. You can freeze some in an ice cube tray for later convenience. You could also cook crushed skinned fresh tomatoes, adding some water. I did find legal canned crushed tomatoes in Ontario, Utopia-ville and got a letter from them certifying the only ingredients as tomaties and salt. I had to dilute them with 50% water.
