Tonight it just broke apart while I took it out of the pan. Anything else == is there an actual " pecan bread? " We're just looking for something else. Also, do you bake it for 1 hour? We make 2 a week and have had a lot of success with it for sandwiches, french toast, etc... Sometimes you just have to tweak things a bit to make it work for you. I cut it into squares and then halve to make thin sandwich bread. I used dripped yogurt instead of DCCC. Guest guest Posted September 12, 2006 Report Share Posted September 12, 2006 Dear List: My youngest would not eat any of the bread recipes until I used the Lois Lang Recipe and used brazilian nut flour. I cannot used DCCC so I just add one more cup of brazilian nut flour and 1 egg to the recipe. I think it has the closest taste to real bread. I always line my bread pan with a paper baking sheet (fit in length wise, I cut off at short ends or fold under to fit ends) when bread is finish, you can let cool off or do it right away - run a knife on the short ends (where the baking sheet is not extended up the sides, then take your long ends and lift right out the pan. It has always worked since using the baking sheets. I use 1/4 coconut oil instead of butter as well because we are casein free. Good Luck! Do you use brazilian nuts and make the flour or do you buy it already made from the Health Food Store? Do you also use only 1 egg as oppose to 3 in the LLR bread recipe? Is dripped yogurt interchangeable for DCCC in any recipes? Your thoughts on this would be appreciated. I have also tried it by just eliminating the DCCC and it comes out fine, I think I may have done the 1/3 cup of the coconut oil instead 1/4 cup. If line the bread pan with parchment paper the bread comes out nice and easy. I always toast my bread before I serve it. Good Luck!
