Recipe: Zucchini Scrambler

This is filling comfort food which can be served for breakfast, lunch

or dinner.

Zucchini Scrambler

1 large zucchini peeled and cut vertically into long flat strips

1/4 onion, sliced thin

2 tablespoons oil

1 extra large egg well beaten

salt and pepper

Fine herbs to taste (rosemary, oregano and basil)

1 oz. legal hard cheese like Swiss or Cheddar, shredded

1 tablespoon almond flour

Heat oil in a 6 " skillet. Add zucchini and onions and cook until it

begins to brown stirring and turning. Add seasonings and almond

flour.Ad egg and cheese and continue to stir until egg is done. Remove

to a plate and cool 3-5 minutes. You'll have to scrape the pan well and

give it a hot soak.
