I will get up now and STEAM some apples and pears. - no more store bought. I have been wanting to give him peanut butter, because he liked it prior, but would not eat it now because we have no bread. I will look up nut butter and try my best to create it. Don't suppose anyone has pre-maid SCD bread for sale do they? COOK, I AM NOT!!! One last concern, the reason I have been using almond flour is because it makes things I know he will eat, muffins, bread etc.. If i don't make anything for him with nut flour until later, he'll only be eating fruit and cheese for weeks. Is that OK???? And how do i know he is ready for nut flour? He finally ate 3 pieces of chicken nugget today. Should i not give him chicken nuggets because they have nut flour coating? He loves popsicles, I made some today with yogurt, frozen strawberries and zuchinni. Is there a way to get protein in a popsicle without tasting it? Do they make a SCD for dummies book.... I know... it's a pain, but I am nervous about the use of this, just based on what we've seen with other kids... even though I know it's listed in the book as " legal " . I would buy some fresh ripe pears, peel them and steam them with one of those veggie steamer baskets. At this point, the skins on the almonds could be irritating and interfering with progress.... plus, if you're not able to get it ground really fine, it's going to be difficult to digest. You might try ordering some from Lucy's Kitchen Shop.... her blanched almond flour is wonderful... and it's only about $6 a lb if you order at least 5 lbs. www.lucyskitchenshop.com For brand new beginners, we really think the nut flours are too advanced.... and actually suggest nut butters are a better thing to start with. Peanut butter should be considered a legume, however.... and introduced later. I know it doesn't say this in the book either... but this is just what we've seen over the years with the little kids on SCD. I think the advice you were given.... to just give him any food on the legal list.... demonstrates that person did not have a thorough understanding of the diet. You really need to start with the intro diet and then move on to legal foods that are very easy to digest. Be absolutely strict about zero possibility of illegal ingredients.... or all your hard work will not give you the results you hoped for. This is not a do-it-yourself diet... you really do need guidance in the beginning. You can use commercial nut butters.... they are, for some reason, much less likely to have added starches/sugars than canned fruits and veggies. Just look for one of the more obscure nut butters... hazelnut or almond or macadamia.... though the almond butter needs to be made from blanched almonds. Not easy to find. Pecan butter is pretty easy to make... and not available commercially, that I know of. Just process raw pecans (on sale everywhere right now) in the food processor... until as find as possible and drizzle in some oil (I use sunflower oil) until it's a nice " butter " consistency. Pecan butter is a good substitute for other nut FLOURS in some of the recipes... and pecans are fairly well tolerated by most (hence, the name of our list! ) I would go by how his BM's look.... as to how the nut flour affects him. Doing the chicken nuggets is fine. That's not too much of the nut flour, though you may want to order from Lucy's to get that finer texture (smaller bits=easier to digest). Or, check out the chicken nugget recipe that was posted earlier today... no nut flour needed. You can boil some chicken breast, let it cool completely, slice accross the grain in VERY thin slices with a sharp knife... then add a small amount of that chicken to your popsicle mixture. He will NEVER know it's got chicken in it.... especially if you start with a very small amount and increase it on him gradually. Try the banana pancakes.... they are WONDERFUL! I don't know why the recipe for plain banana pancakes is not on the website... but here ya go: 1 ripe banana 1 egg Beat the egg and add to mashed banana. If the banana is really BIG, you may want to use two eggs.... or if you are using small eggs. Since eggs and bananas do vary a bit in size, it may take some experimenting to get just right. Add a small amount of batter to hot, greased griddle or skillet.... I use a medium heat. I keep the size small so they're easier to flip. You'll get it down after you've tried a few. Make a syrup from a bit of melted butter and honey.... about a Tablespoon of each. These pancakes are SO good... and you'd never guess there is no flour in them at all. I can get almond butter at the local health food store as well as at my nicer grocery stores. You can find almond butter very easily. Pecan butter is pretty easy to tolerate for most kids, but I've never found it in the store. You can make it by grinder up pecans(minus the shells) in your food processer or blender, and adding a bit of oil(saflower is probably best) at a time until it reaches smooth butter consistency. What about trying the chicken nugget recipe that someone posted just a few days ago. It was mayo(homemade, of course) and finely chopped, cooked chicken. Use the mayo recipe from pecanbread.com. Shape the mixture into nugget shapes on your cookie sheet. Bake it a 350 for about 35 minutes. It should come out crispy like nuggets. I've never tried it, but a lot of people say that cooked chicken breast can be sliced very, very thin, and pureed with other foods without being detected. Remember not to use shredded cheese from the store. Buy it in brick, and shred it yourself. Preshredded is not allowed because they use a starch to keep it from clumping in the bag. Are you using homemade yogurt following the directions on pecanbread.com? That's very important. Did you cook the strawberries? I think that you'd find the " stages " list very helpful. Look under the food preparation section at pecanbread.com. It is not set in stone, but this is a very helpful list for you to know what foods are advanced. You can use this as your guide to know what foods are easiest for him to digest, and what you should introduce before others. Strawberries would be considered more advanced even though cooked because they have the little seeds. You could cook the strawberries and then strain them through a food mill to remove the seeds, but it would come out more like syrup. You should be cooking all fruit and vegetables at this point. Peal everything. Call me if you want. . I know it seems overwhelming especially since you say you're not a cook. We'll all help any way we can.
