Remove from heat and stir in butter until melted. Set pan in cold water and beat until thick. Add nut butter. Dip or spread on 1/2 the strawberry and chill until firm. Carol F. Maybe you could use the " Toffee Candy " recipe on pecanbread.com but not cool it until you had it on the apples. Obviously, we can't use the sugar, but you should be able to substitute honey in place. You can either leave the cream out, or treat it with the drops that Carol has posted about in the past. If Carol already knows that the fudge recipe can work, I'd just use that this time, and experiment with your own caramel recipe when you don't need it right away. Boil for 2 minutes. Constantly stir to make sure ingredients are well blended After 2 minutes take off burner.** Add 1/2 tsp legal vanilla 1/2 tsp baking soda The mixture will bubble up when these 2 ingredients are added. Stir well and allow to cool. As is this works well as a frosting/icing for cakes and cupcakes. I have also used it thin-ish as a caramel dip for fruit at my kids bday party. We ran out and had to make more because the kids liked it so much. **To make it thicker to stick to apples you may want to heat it longer in the first stage (before adding the vanilla and bking soda).
