We've been using Friendship Farmer's Cheese which is listed as a resource in BTVC on pg. 187 (from Whole Foods)for about 4 months. I just now read the ingredients which say skim milk, cream, salt - totally my fault for not reading sooner. Now this freaked me out a little because of the cream so I went online to research a little and now I'm completely confused. HELP! Leah - ASD, SCD since July Here's what I found: Friendship Farmer Cheese Ingredient Statement Cultured Pasteurized Grade A Skim Milk, Cream and Salt. Nutritional Information Serving Size: 1 oz.(30g/About 2 Tbsp.) *DV = Daily Value Calories: 50 Fat Cal.: 25 Total Fat: 2.5g Sat. This is the last word from me: Get a dry curd Farmer Cheese with no fat because that is the only thing I know is pure curd. I despise using the word " fat " because you know we don't give a hoot about the fat content. But once the dry curd says it is 10%, I begin to worry because something has been added and it is not just fat. DCCC - Friendship Brand In answer to a list-members question, " I know this is in the book , but I'm not crystal clear on this yet. Is Friendship Farmers Cheese legal, or only the Friendship Hoop cheese? My local store carries the farmers cheese and is looking into ordering me the hoop cheese?
