Guest guest Posted October 22, 2006 Report Share Posted October 22, 2006 In the beginning, we did the following for main dish type take along foods. hamburger patties chicken fajita strips-marinate a ton of chicken breasts in olive oil, lime juice, garlic, and cumin. Slice chicken in strips and grill. I freeze the cooked strips on a lined cookie sheet, and then transfer to freezer bags. boiled eggs deviled eggs chicken nuggets-chicken bites dredged in nut flour, salt, pepper, and othe herbs or spices. Pan fry or bake and freeze on a lined cookie sheet. Transfer to freezer bags. Marilyn's hotdogs without casings I can't remember if you can do eggs. If so, you can try Marilyn's beef and croccoli pie...using another vegie if you can't do broccoli yet...and bake in muffin cups. They freeze well, and are easy to handle on the go. I've even done mini muffin ones for baby. You can also try some muffins or breads, chicken salad, ect. I sympathize. I remember thinking that it was really hard to do scd on the go in the beginning without doing plain and boring. I think that a lot of that was due to us eliminating eggs initially, and just my lack of creativity because of being overwhelmed. We're really starting to get the hang of it now thanks to reintroducing eggs with no problems now, and some recipe help from friends here.
