It is not whether they are hard or soft but how long they have been cultured and Brie is ok. charlene UC 8 years SCD almost 6 years I saw the goat's cheese Brie called Soignon. Is that legal? Just ask the clerk how long it has been aged Sue, the Soignon is one of the mildest and most delicate of goat cheeses and is legal. Once when Elaine and I went to the movies, I brought that as my 'snack. " Others I like are goat marbled cheddar (orange and yellow) and regular goat cheddar. Many goat cheeses from Quebec rank right up there with French goat cheese. The age is important. i once reacted badly to a Goat Brie from Woolwich dairy in Ontario and found it was not sufficiently aged. Carol F.
