It does not use any nut flours and my boys just love it. One large acorn squash cooked 2 eggs 1 tbs honey a little cinnamon Blend in food processor and pour small amount 1-2 tsp in well greased mini muffin pan and bake on 300 degrees for 40 minutes Her explanation is better than mine, but that is the gist of it. I use muffin liners and they work just fine. That would probably also be a way to get some good carbs in her. I've got a huge amount of pumpkin puree in the freezer, and I thought this would be a good way to use it up. I guess butternut, buttercup, carnival, squashes and other varieties would work, too. Or is it better to eat them immediately? I wanted to send some with my son to grandmas this weekend I didn't want them to go bad before he ate them. We traveled to family over the Thanksgiving week, and they were great to have along with us for snacks in the car and then at Grandma's house.
