Jenn,

Did you get the recipe a couple of weeks back for squash buttons by Debbie

Kirk ( I think that is her name). It does not use any nut flours and my boys

just love it.

One large acorn squash cooked

2 eggs

1 tbs honey

a little cinnamon

Blend in food processor and pour small amount 1-2 tsp in well greased mini

muffin pan and bake on 300 degrees for 40 minutes

Her explanation is better than mine, but that is the gist of it. I use muffin

liners and they work just fine.

That would probably also be a way to get some good carbs in her.

Allergic to cinnamon. It's hard to make things taste good. I will try them

without it though. Thanks for the recipe.

I have tried these but with normal muffin pans (kids love them) but they are

still quite mushy.

Are yours pretty firm when they are done?

Has anyone tried these with other winter squash? I don't know why it wouldn't

work with others. I've got a huge amount of pumpkin puree in the freezer, and I

thought this would be a good way to use it up. I guess butternut, buttercup,

carnival, squashes and other varieties would work, too.

Would this recipe work with other vegetables? My son can't have squash,

carrots, or zucchini. What else might work? I'm wondering about beets.

I have friends that do not eat cinnamon. They replace it with 1/2 cardamom and

1/2 coriander. I don't know if those are legal, but if so, you could try that

instead.

couple of days? Or is it better to eat them immediately? I wanted to

send some with my son to grandmas this weekend I didn't want them to

go bad before he ate them.

I think Debbie (who originally sent in this recipe) said that she would make

up a bunch and freeze some. I have not frozen any yet so cannot speak from

personal experience.

I haven't frozen any yet - I can't keep enough around to get that

far, but I keep them refrigerated for up to 3 days without any

problems. We traveled to family over the Thanksgiving week, and they

were great to have along with us for snacks in the car and then at

Grandma's house.
