Guest guest Posted November 29, 2006 Report Share Posted November 29, 2006 This is my experience. I used the sneaky veggie pancake recipe from pecanbread.com. I used one cup of pureed fruit or veggie, 4 eggs, 1 tbs coconut oil, tsp vanilla and 1 tsp cinnamon and pureed together. Instead of cooking up like pancakes, I put it in the mini muffin tin and cook for the 40 minutes. Ours did come out like the squash buttons. I think probably any pureed fruit or vegetable might work with this recipe, but may be slightly different in texture based on the fruit or vegetable. If you use pear or apple, I would steam it and then drain it well on a dish towel to get as much water out as you can. Then, you could puree it with the eggs. You might want to use an extra egg just so it will hold together better. Just a thought. Let us know if it works. Is the purpose of making " buttons " instead of pancakes so that you don't have to stand in front of the griddle a long time, or are they sturdier, or what?
