I have used both but the almond skins are hard to digest and baked goods are finer with blanched almond flour, Carol F. Guest guest Posted October 11, 2006 Report Share Posted October 11, 2006 If it's mostly sort of creamy white/yellow in color, with just the occasional speck, it's probably fine. If it was made from unblanched almonds, you'd definitely have brown specks liberally throughout. If you want to buy raw almonds and blanch them yourself.... it's quite easy, but a little time consuming. You just drop the nuts into boiling water for about two minutes, drain and spread on a towell to dry and cool. When cool enough to touch, just grab a nut and pinch.... the inner nut will pop right out of the brown skin. Voila'.... blanched almonds.
