I made it once with olive oil - and it was nasty! I now use sunflower

oil, safflower also works well, but sunflower is my favorite. I use a

little honey to sweeten.

I also do not like mayonnaise made from olive oil, or at least not all olive

oil. I haven't really made much mayo since starting SCD, but I think that what

I used to do will be ok for SCD. I usually made mayo using a flavorless oil

such as Crisco for most of the oil and then added a splash of olive oil and a

splash of sesame oil for flavor and everyone thought that the results were

excellent.

Just before starting SCD, I had been reading about trans fats and had decided

to quit using the flavorless oils that I had been buying before. So when I

start making mayo again, I'll be experimenting. But that is not part of SCD

protocol and you don't have to worry about it at all, if you don't want to. My

first try at mayo will be with unrefined peanut oil or as I heard someone on the

list suggest, grapeseed oil.

Please let us know how your grapeseed oil - or unrefined peanut oil - mayo

turns out. I'm very interested in using non processed non trans fat oils as

well, so I'm avoiding sunflower etc...
