Buffalo Mozzarella

I know that Mozzarella is illegal on SCD. But there is a farm in

California that makes real mozzarella (i.e., with buffalo milk, not cow's

milk) the Italian way and claims on their website that their Mozzarrella is

lactose-free (has had the lactose all digested).

I wouldn't know by trying it if it really has lactose or not since I've

personally never knowingly had any trouble with lactose. But if someone

who can tell would care to try it and report back, it could be a great way

to make SCD pizza that is more like the real thing.

What is it about mozzarella that makes it illegal verses the legal cheeses? I

don't know much about the making of various cheeses to be able to figure it out.

I really don't mind if I can use it or not because there are so many other

cheeses to choose from, but I'd like to know for information's sake.

It is not aged long enough for the lactose to be consumed by the bacterial

culture used in

the cheese making process.

Hi ,

I looked at the site (the production link) and could find no mention

of a bacterial culture or how long it is fermented. It " seems " that

it is put in a brine instead. If so, it isn't a legal cheese.
