To test... as you are boiling the honey mixture, keep a small dish of ice water on hand. When you think it is done, drop a drip of the mixture into the ice water, it will harden and show you its consistency when cooled(soft, chewy or hard crack). If it is too soft, keep boiling until you have reached your desired consistency. Below is a recipe that Elaine once posted to the old list, it's really good. When I made it for a family function it was gobbled by all, including non-SCDers. ALMOND ROCCA 1-1/3 cups butter 1 cup honey 3 cups roasted almond slices Cook butter and honey over medium heat to " hard crack " temp. Add almonds, stirring over heat for one minute. Pour onto parchment paper and refrigerate to cool.
