You can freeze the DCCC and use it later.

recipes with farmer's cheese or DCCC?

i just gave my BTVC cookbook to one of my new ABA therapists to look

over and just realized i have 3 8oz packages of farmer's cheese

expiring 11/1. i was so excited when i finally located a store near me

that carried it that i bought too much. so far my son isn't eating any

of the baked goods but i could make some to freeze for later. can

someone post a few interesting fun kiddie type recipes so i can use it

up before it goes bad? are there any recipes on the website?

My absolute favorite is the cheesecake recipe in BTVC and it is so easyso here

goes:

BTW You can freeze the cheesecake or portions of it.

Use a food processor:

3 eggs

1/3 cup honey

1/2 cup SCD yogurt or dripped yogurt

2 cups DCCC

2 teaspoons vanilla extract

1-2 teaspoons grated lemon rind.

Preheat oven to 350 F. Put all ingredients into processor using the metal blade

(eggs first

so blades turn freely). Blend until smooth stopping every 15 seconds to push

ingredients

down. Scrape sides with a spatula. Pour into loaf pan. Bake 30 minutes until

edges are

brown. Cool and refrigerate. (You can cook berries or use canned pineapple as a

topping)
