I think probably any pureed fruit or vegetable might work with this recipe, but may be slightly different in texture based on the fruit or vegetable. If you use pear or apple, I would steam it and then drain it well on a dish towel to get as much water out as you can. Then, you could puree it with the eggs. You might want to use an extra egg just so it will hold together better. Just a thought. Let us know if it works.
