You do not have to use butter. I would recommend coconut oil in place of

butter. Just as a general cooking rule...not scd specific...olive oil is not so

great in baked goods. It has a very distinct flavor that just isn't the best

tasting in cookies, cakes, ect. Coconut oil has almost no flavor at all, and is

solid below something like 70 degrees. It's good for using in place of butter

that needs to be cut in as a solid form, but you can use it in place of butter

when it is liquid as well.

We use coconut oil instead of butter in our cookies.

If it is JUST a casein issue; ghee is great. Smells and acts like

butter, but no c. Coconut can have a laxitive effect on some people.

I am a bit leary of using *delicate* efa oils in cooking (add them

after), but that's me.

You can make it yourself or buy it. If you are caseinophobic,

buying the 'tested c-free' might be easier on the mommy worry gene.

Light olive oil has a mild taste and works great for baking without the flavor

of the extra virgin olive oil. Since olive oil is a liquid, use 25%less than

butter in recipes.
