A year or two ago, I contacted Thai Kitchens and asked that they make a line of gum-free coconut milk since they make sulfite-free coconut milks that are great but contain guar gum. Maybe if lots of us asked they would consider it! I thought, since they make an organic coconut milk, that would be a good one to take the gum out of. However, on SCD, all canned coconut milks are not legal, no matter what they say on the label. I have found one or two brands that have neither gum nor sulfites but they weren't terrific and they were illegal. This is one area where I would not follow SCD if the milk quality was good and the gum was removed, because you are right, coconut milk is not easy to make! I burned up one inexpensive blender trying, and bought a very expensive commercial blender as a result. Even that, though better, doesn't make a product comparable to canned. I am pretty sure that canned coconut milk is not strained (as homemade SCD coconut milk is) but just pulverized to such a degree that there is no coconut pulp detectable in it. I got close with my new blender, but my kids still complained about the mouth " feel " or texture of the homemade ice cream. Sure do miss Thai Kitchens... Lorilyn potassium metabisulphite Dear List: Does anyone know if potassium metabisulphite is legal on SCD? I have seen it listed on cans of coconut milk? The brand is Orchid, it doesn't have guar gum so I thought it was a possibility. I'm not good with making coconut milk from scratch.
