I think it depends on the company... and whether they just took raw cashews and roasted them as is. You would need to contact them to be sure. If they purchase cashews that are pre-roasted, then grind them up, they would have not way to assure you there were no added starches. If you are referring to Maranatha brand, here is a clip I took from their website, re: their roasted nut products: << " Roasted " nut butters are baked or heated in some way to produce a desired flavor and/or color prior to grinding. Some manufacturers use oil in the roasting process. At Maranatha, we do not use oil. Instead, we carefully dry roast the nuts at low temperatures to produce a delicious, toasty flavor. >> They do add oil as they grind the cashews for butter... because cashews are pretty dry and starchy- the oil is needed to make a smooth butter. You *can* make your own cashew butter with raw cashews, using a food processer... you'll need to add a bit of oil, until it processes to the smooth consistency you want. The book says to eat only raw cashews, but what about cashew butter? I am only finding cashew butter made from roasted cashews at my local HF store. I want to use it for the Cashew Butter muffins. I have been substituting peanut butter in the recipe, but I thought variety would be good. Their website popped up for me with a Google search... www.onceagainnutbutter.com .. but there isn't enough info posted there to be sure. The contact info is on their site.
