Chilling helps to firm yogurt up and we never stir it or disturb it really, until it's been chilled for 6-8 hrs. But, yes, it's normal. Dripping it may help. Line a colander with a clean tea towel and set it over a larger bowl.... pour in the yogurt and set the whole thing into the fridge to drip for a few hours. The longer, the thicker. I made yoghurt for the first time. One batch of cow and one goat milk. The cow yoghurt came out as expected, like at the store. The goat yoghurt is almost runny, but tastes ok (and pretty tart). If you don't want it as tart (and runny), then you can drip it in the refrigerator by lining a colander with a cloth and setting the colander in a bowl. This drips out the liquid, makes it firmer, and less tart. It is completely normal for the goat yogurt to be runny and the cow yogurt to be more of a custard consistency. I give the goat yogurt to my boys in their sippy cups to drink like milk. Guest guest Posted September 13, 2006 Report Share Posted September 13, 2006 Goat yogurt is very runny. If you drip it (and I do) almost half of the volume of yogurt will drip off as tart water. I drip it in a fine mesh, dishwasher-safe coffee filter cone (which they sell at Target) propped in empty large Purity Farms ghee jar. What is left is like cream cheese or chevre, in fact, with salt added it would pass as chevre. My son loves pesto, so I mixed the dripped goat yogurt with some pesto and spread it in sections of red bell pepper and he loved it.
