>> When you have time would you please tell us what your bottles of

Pearl,

In the words of the Canadian Mounties... " The difficult we do at once...

the impossible takes a little longer! " It's a bit late to pull the recipes

for the quiches together, so I'll try to do that tomorrow.

Hurricane Dressing

During the hurricane season of 2005, I got to create a new salad dressing.

The power was out for two days after Hurricane Cindy, and I wasn't opening

my freezer or refrigerator for anything. But I did have my spices, and oil

and vinegar. And so, the following recipe resulted.

1/2 cup olive oil

3 tablespoons red wine vinegar

1/2 teaspoon homemade onion powder

1/2 teaspoon homemade garlic powder

1/2 teaspoon yellow mustard powder

1/2 teaspoon salt (optional)

1/4 teaspoon white pepper

1/4 teaspoon powdered horseradish

1/8 teaspoon Krivelshire spices

1 small drip liquid lecithin (legal emulsifier, makes oil and vinegar stay

blended on your salad -- you can also add a little bit of egg yolk and use

the rest of the yolk in an omelet)

Place in bottle and shake well. Best if allowed to stand for at least one

half hour before use. Even better the next day.

Krivelshire Spices

1/2 tsp. dried ground ginger

1/4 tsp. ground cloves

1/4 tsp. ground coriander seeds

1/4 tsp. ground allspice

1/4 tsp. cayenne pepper

Blend together and store in a tightly closed container. 1/4 to 1/2

teaspoon is usually enough for most recipes.

Note: if you do not have homemade onion and garlic powder, you can

substitute 1 1/2 teaspoons very finely minced yellow onion, and the same of

pressed garlic. But hurricanes are one reason I like having my own powders

available! They're convenient if I'm out of fresh stuff!
