The lecithin, however, is an oil-stuff, and is therefore legal, since oils, even from grains (like corn oil, although why anyone would want to use corn oil is beyond me...). Lecithin can also be derived from egg yolk, if you can find it. In fact, it is the lecithin in egg yolk which allows us to make our own mayonnaise, which is an emulsion. You can also use the liquid lecithin to make a non-stick spray -- mix 1 cup really cheap vodka with 1-2 teaspoons lecithin, and put it in a spray bottle. Spray on warm pan. The alcohol evaporates, leaving a thin coating of lecithin on the pan, which is non stick. Lecithin, incidentally, is what Pam and other non-stick sprays include.
