Hi.

My son has a lot of mouth sensory issues and would not eat. I

discovered thru this site, that pork rinds are legal. I grind them in

the food processor and use them as bread crumbs and sometimes I add

some spices. I do the usual thing of dipping the meat/vege in egg and

then the crumbs. I fry them and he eats them with no problem. It is

really the only thing that he willingly eats. Also I would take a

pork rind and stuff it either with peanut butter or some

meat/cheese/vege. He would eat them easily also. everyting else is a

struggle for him. I know a lot of people don't like frying, so you

can bake the items after they're breaded with the rinds. I find the

UTZ brand to be the best and least salty. You can also bake some bread

and make bread crumbs out of it and mix it with the ground rinds.

They give the bread crumbs a good crunch.

I hope this helps you. My son's favorites are zucchini prepared this

way and ground chicken.

How long has your son been on SCD? I have a cracker I make from

cooked beans.

My two year old boys also enjoy eating cruncy foods. They have been on the

diet for almost six months. Can you give me your recipe for crackers from

beans?

Is your copy of Breaking the Vicious Cycle handy? I have the

Millenium edition and the recipe is Herb's Bean Pancakes on page 100.

As a caution to others--beans are not for beginners. :)

Salt is " to taste " in the recipe. I used 1/4 t. My changes are to

use 2 eggs instead of 1 to keep them from falling apart. Then I

thinned the batter a lot because I had crackers in mind (but the

pancakes are yummy; the onion gives them a flavor like a potato

pancake, different texture, though.) I thinned the batter with the

liquid from sauerkraut. But the recipe says to use yogurt. I think

water or the liquid from cooking veggies would be good, too.

The sauerkraut liquid made them a bit salty, but my son says they

are just fine. I used a lot of oil on my griddle.Even though it's

" non-stick " I often have sticking problems. I made the pancakes

small. I think next time I'll make them really small, maybe

Ritz-cracker size.

Then I cooked them on both sides and put them in the dehydrator. I

had no idea what temp to use: I started at 145 for about 3 hours and

then dropped it to 95 before going to bed. I had them in for 10 hours.

I hope they work for you. We were excited to have a nut-free cracker

to send to school.

How long have you been on the diet? (It helps us answer questions if

this info is added in your email, you can put it at the bottom of your

email)

Wht types of food does he tolerate ?
