" My reply: The only time this has happened to me is when I have been in a hurry and put the starter on the bottom of my fermenting jar and then pour all the milk on top and mix. We are told to first add a little of the heated milk into a cup to whisk in the probiotics/starter well, and then add it to the rest of the milk that we have put into the fermenting jar......mix again well... and then ferment for a minimum of 24 hours. This way all the starter is distributed well throughout and not just on the bottome where we couldn't stir it well...where it becomes " grainey " during the fermentation process. I'm just trying to figure out why it has this consistency at the bottom. I made it, of course, according to btvc instructions as usual. I even strained it after it cooled, but before I added the starter. Everything was done properly, but here I have this grainy texture only at the bottom. Weird. Any ideas?
