Guest guest
Has anyone had success the the chicken cupcakes recipe listed on the pecanbread website? (I have copied and pasted it below. I tried them the other day and they didn't seem to hang together like a muffin or cupcake--the banana seemed to make them much too mushy. Any ideas? Thanks, Audrey 1 cup finely ground cooked chicken 1 pureed medium bannana 1/2 cup butternut squash (pre-cooked) 1 egg 1/2 tsp baking soda Mix well and put into muffin pans w/liners. Guest guest
Audrey, I cook the chicken cupcakes several times a week and one of my children loves them. I put in half of a cooked acorn squash and that seems to hold it together better. I also bake it at 325 degrees for 25 minutes and then let them cool before I offer them to my boys. They are still mushier than muffin made with almond flour but seem to hold together better this way.
