Recipe: Zucchini Side Dish

This tastes a little like mashed potato and is less gassy than cauliflower:

Peel a large zucchini and cut into flat thin strips with the vegetable peeler.

Heat skillet, add

2 pats of butter and saute the zucchini unril soft and transparent. Add a

heaping

tablespoon of almond flour and cook another 3-5 minutes stirring often. Add

your

favorite seasonings.

Would nut butter work in place of flour, or will the texture be wrong?
